Dear Fresh Friday friends,

I received lots of great comments for last week’s menu, which is great, thank you. This week we indulge in a couple of classics from Italy.

Everyone is familiar with a parmigiana; well it may surprise you to know, the original parmigiana was made with eggplant and was a peasant vegetarian meal. So this week I am making Baked Eggplant Parmigiana.

So this week is all about layers and great flavours of course.
